Although I am not a professional chef, I have many chef knives from many different companies. This Fujiwara Gyuto knife in the 27 cm variant beats them all. Perfect balance and handling weight and the sharpness is far beyond razor sharp. A unique masterpiece of Japanese craftmanship and I am proud to own a Fujiwara now by myself. The service and interaction with the company was outstanding. And all people in this company are eager to deliver the best possible service and product. Knowing that the knife was forged for me took me the patience to wait for it. It even increases the anticipation. Shipping was super fast and without any issues incl. tax handling. So if you want a real special knife for daily use - invest money and time for a Fujiwara. And no worries about the invest.
