I received my gyuto knife. I personally see this knife as a true piece of art. It is indeed incredibly sharp. The knife has a very good balance and a rustic finish (nashiji). To me this is more than just a kitchen tool. Since it's made by hand I feel like the knife has a soul and I am responsible to take good care of it, which I will of course. The engraving is also beautiful.
I want to thank everyone that has worked on my knife.
