The Santoku knife incorporates the strengths of the Gyuto and the kitchen knives and comes with a wide-width design, ideal for home use. This knife can handle meat, fish and vegetables (three uses) that is the origin of the knife name. The series of Gyuto knife, Nashiji has a sandwich structure with stainless and steel (shirogami (white paper) No.1). The surface of the blade is called Nashiji because it looks like skin of Japanese pair and that prevents slices from sticking to the blade. This series of the the knife is the most reasonable price. The steel (shirogami (white paper) No.1), which is white steel called shirogami (white paper), contains many carbon and that makes knife hard and high sharpness cutting blade, and the raw materials are made by Hitachi Metals, Ltd.

Mike EScore:★★★★★Date:2025/10/23A wonderful knife with excellent fit and finish and laser like sharpness, cutting effortlessly and retaining its edge brilliantly. The shirogami 1 core steel quickly developed a lovely patina which compliments the stainless cladding beautifully and has prevented rust, combined of course with a little extra care during use and storage. If fitted with the standard handle, I would recommend oiling it thoroughly before use as it is quite absorbent. Sincere thanks to everyone at Fijiwara Teruyasu Edged Tool Craft for both providing a treasured knife and the prompt, courteous communication throughout the process.
